Ramenya Shima, Celebrated as Tabelog Top 3 for Ramen in Tokyo, Marks Global Debut in Hong Kong This March

(24 February 2026, Hong Kong) Ramenya Shima (らぁ麺や 嶋 ), consistently ranked among Tokyo’s top three ramen establishments, will unveil its first overseas venture at Sugar+, Causeway Bay’s lifestyle hub, in early March 2026, serving a limited number of portions daily. Since opening its Shibuya flagship in 2020, the celebrated ramen artisan has excelled in the artistry and depth of flavour of its signature noodle soup. In Tokyo, only 60 bowls are prepared each day, and the Hong Kong branch continues this philosophy of restricted servings to uphold the brand’s devotion to craft and quality.

 

Ranked in the Tokyo Top 3 for ramen by Tabelog for five consecutive years, Ramenya Shima is a testament to the unwavering talent of Chef Hiroshi Morishima. Under his leadership, the restaurant has garnered numerous accolades, including the Tokyo Ramen of the Year (TRY) Newcomer Grand Prize in 2020 and Tabelog Bronze Awards in 2022 and 2026. With a long‑standing rating above 4 on Tabelog – a distinction reserved for the elite – it has also been named in the Tabelog Top 100 Restaurants list from 2021 to 2025, affirming its reputation as an essential destination for lovers of fine cuisine.

 


The talented chef‑proprietor brings an exceptional ramen pedigree. A native of Tokyo, he grew up immersed in Japan’s ramen culture, honing his craft and embracing a philosophy that balances tradition with innovation. Building on this foundation, he later travelled overseas to share Japan’s ramen culture, broadening his perspective while staying true to his roots. That ethos defined Ramenya Shima from its opening, with his handcrafted recipes and devotion to quality quickly propelling the restaurant to celebrity status.

 

Artisanal ramen noodles in a choice of flavoursome tanrei‑style broth are the heart and soul of Ramenya Shima. Three signature soup bases anchor the menu: Shoyu (Japanese soy sauce) – a robust, layered broth enhanced with a special soy blend; White Shoyu – a fine balance between salt and soy, enriched with white-truffle oil and black-truffle paste for greater depth and lingering aroma; and Shio (salt) – a refined, delicately seasoned soup that highlights the natural flavours of the ingredients.

 

Faithfully recreated from the Tokyo flagship, the soup base is simmered with nearly 30 premium ingredients – Japanese chicken, scallops, clams, aged bonito flakes, sea‑bream head, kombu, and fresh vegetables. The result is a crystal‑clear foundation, rich in umami and subtle complexity, artfully seasoned into three distinctive broth styles.

 

Ramenya Shima’s artisanal noodles are renowned for their supple elasticity, delicate fragrance and rich, savoury taste. Free from additives or alcohol, they are crafted with a recipe that faithfully reflects the Tokyo flagship – a blend of five flours led by Kitahonami, a superior winter wheat variety from Hokkaido. Smooth yet satisfyingly al dente, the noodles harmonise beautifully with the flavour‑intense broth.

 

Completing the bowl are four kinds of handmade chashu (braised pork belly), shrimp wontons and pork wontons, crafted daily by the skilled culinary team to ensure freshness and authenticity. These ingredients elevate the ramen experience by providing a comforting bite that contrasts delightfully with the richness of the soup and the suppleness of the noodles.

 

“I am thrilled to bring Ramenya Shima overseas for the first time, and particularly to Hong Kong, where diners are renowned for their discerning taste and love of ramen,” says Chef Morishima. “We chose to open in Causeway Bay as its energy and accessibility mirrors the spirit of Tokyo. I am confident every guest will feel the warmth and depth of our ramen, handcrafted with recipes perfected in Japan.”

 

Occupying near 1,200 sq ft, the Hong Kong flagship fuses modern and traditional Japanese aesthetics with warm wood tones, intimate counter seating and distinctive artistic accents. A minimalist façade adorned with traditional noren creates an inviting entrance to a cosy, stylish ramen haven that seats 24 diners.

Located at Shop 1, G/F, Sugar+, 31 Sugar Street, Causeway Bay, Hong Kong, Ramenya Shima will debut in March 2026, opening from 11:30 a.m. to 9:30 p.m. daily.
